Zucchini with Pastaserves 1
So last week I was looking for something quick for dinner to bring to work with me, so I threw this together. It turned out really good, I think, so I’m posting my recipe! (:
Ingredients:
1/2 onion, chopped
1 clove garlic, chopped finely
1 zucchini, chopped into bite-size chunks
1 tsp olive oil
red pepper flakes, basil, & parsley
salt & pepper to taste
1/2 cup pasta of your choice (I used some of the mini pastas with vegetables IN them, but next time I think I’m going to use whole wheat pasta)
parmesan cheese
Start a pot of salted water for the pasta. When it starts to boil, throw in your noodles; strain them when done!
While this is happening, start you zucchini! Put the olive oil in a hot pan, and throw the onion and garlic in. Let those saute for a few minutes, or until they get some color. Throw the zucchini in, put in around a 1/4 cup of water (to create steam!), turn the burner down to low, and put a lid on the pan. Let this cook for about five minutes, or until your zucchini gets soft. At that point, throw in your herbs & spices and salt & pepper. Turn the burner back to high and let the zucchini get some color! When you think your done, throw your drained pasta in the pan for a few seconds, just to get everything mixed together, aaaaand plate! Sprinkle with some parmesan, and enjoy!
